1 cup. Onion, diced
1. Bell pepper, diced
1/2 cup. Spinach
1/2 cup. Zucchini
3 cups. Vegetable broth
1 cups. Diced tomatoes
1/2 cup. Salsa
1 can. Tomato sauce
1 can. Black beans (choose no sodium if possible)
1 cup. Red split lentils, dried
1 cup. Corn
2 tsp. Chili powder
2 tsp. Cumin
2 tsp. Garlic powder
1 tsp. Cayenne
1 cup. Cashews (soak and blended)
2 Tbsp. Taco seasoning (I love oh she glows recipe)
1. Add all ingredients into slow cooker.
2. Cook on high for 5-6 hours.
3. Add desired toppings.
