1/2 cup Spinach
2 Potatoes, diced
1 can Tomato Sauce
1 can Coconut milk
3.5 cups Vegetable broth
2 cloves Garlic, minced
1/2 Red onion, diced
1 tsp Cumin seeds
1 Tbsp Red curry paste
1 Tbsp Olive oil
1 tsp Black pepper
1/2 cup Broccoli
2 Carrots
1/2 cup Peas
1 cup Chickpeas (optional)
- Fry onion, garlic and cumin seeds.
- Add curry paste.
- Add broth, veggies, tomato sauce and coconut milk.
- Bring to a boil, reduce heat simmer for 20 minutes.
