3 cups Gluten Free all purpose flour ( I use Cloud 9)
1 tsp Salt
2 tsp Baking Powder
1 tsp Cinnamon
1 tsp Nutmeg
1 tsp Ginger
2 cups Brown Sugar
3 Tbsp Flax seeds, ground
1/2 Cup Water
2 Cups Zucchini, grated
1 Cup Vegetable oil
1 Cup Carrot, grated
1 Cup Raisins, Currants, or Cranberries (or use a combination of them all)
- Preheat oven to 350F
- Mix dry ingredients together.
- Mix wet ingredients together.
- Add dry ingredients to wet.
- Put into two loaf pans.
- Bake for 1 hour.
