Apple Donuts

Looking for a healthy snack for your little ones? This is so quick and easy to do and the kids can even help. This can be adjusted to anyone's tastes. Another bonus is it can be nut free and can be adapted to suit many dietary restrictions. This is both gluten free and vegan. We like to use currants as they seem to fit better on the size of our apples. Enjoy!

1 Apple
2 Tbsp. Nut or seed butter
1 Tbsp. Unsweetened dried coconut
3 Tbsp. Currants
Sprinkle of cinnamon

Other topping suggestions-

  • Chia seeds
  • Hemp seeds
  • Dried raisins (look for those without added sugar)
  • Dried cranberries (look for those without added sugar)
  • Sprinkle of nutmeg
  • Chopped nuts

  1. Cut Apple crosswise.
  2. Using a small knife cut out the core of the apple.
  3. Spread nut or seed butter on apple.
  4. Add toppings as desired.

Chickpea Veggie Burgers

1              medium-large potato
1 cup       carrot, grated
1/2 cup   red pepper, diced
2 cloves  garlic
1 can       chickpeas, rinsed
1/4 cup   nutritional yeast
1 Tbsp    tomato paste
1 tsp       herbamare
1 tsp       apple cider vinegar
1/2 tsp   mustard
1 tsp       black pepper
2 tsp       chili powder
1 tsp       rosemary
1 cup      rolled oats *gluten free if necessary

1. boil potato
2. in a food processor, process oats to form a flour, then place in a bowl.
3. in a food processor, add carrot, pepper, garlic and pulse until finely chopped. 
4. add remaining ingredients and process until smooth.
5. mix with oats in the bowl. 
6. form patties.
7. bake at 400F for 15 minutes each side.
