2 1/2 cups. Gluten free flour
1/2 tsp. Xanthan Gum
1 cup. Sugar
2 tsp. Baking powder
1 tsp. Baking soda
1/2 tsp Cinnamon
1/4 tsp. Salt
3 Bananas, mashed
1 3/4 cup. Milk alternative
1/2 cup Vegetable oil
2 tsp Vanilla
1 Tbsp Apple cider vinegar
1. Preheat oven to 350F.
2. Mash bananas.
3. Add all other ingredients in and mix until a batter forms. Be sure to not over-mix- a bit lumpy is fine.
4. Divide into two square cake pans- if not non-stick be sure to grease first.
5. Bake for 25 minutes.
6. Cool on wire rack before frosting.
