Summer time means summer fruit. I had a lot of fresh peaches from the Okanagan so I have been putting them to good use. This recipe is very easy to make and it is a nice summer dessert, or snack as the case may be. You can add whatever fruit you like - I have used, different berries, apples, peaches and the list goes on and on. You can eat as is, or serve with yogurt or ice cream. Enjoy! 3 cups Fruit, diced (if berries you can use whole). 2 Tbsp Lemon juice 2/3 Cup Brown sugar 1/2 Cup Gluten free flour mix (I used Cloud 9)* 2/3 Cup Rolled oats (use gluten free if necessary) 1/3 Cup Coconut oil, melted 1 tsp Cinnamon 1/4 tsp Salt 1. Add cut fruit to bottom of 8x8in baking dish. 2. Sprinkle lemon juice on fruit. 3. Mix brown sugar, flour, oats, coconut oil, cinnamon, and salt in a bowl. 4. Sprinkle oat mixture over fruit. 5. Bake at 350F for about 20 minutes, or until golden brown. *Can sub with all-purpose or whole wheat flour if you don't need gluten free. Looking for more dessert ideas that are kid-approved?
