This recipe requires no baking and is quick and easy to make. This is a great toddler and kid snack. I used puffed quinoa but it would also work to sub with rice crispy cereal. This recipe makes about 20 balls, depending size. 2/3 cup. Peanut Butter - look for no salt or sugar 1/3 cup Medjool dates 3 Tbsp. Carob powder (could likely sub cocoa powder but I used carob as naturally more sweet flavour) 1 cup. Puffed Quinoa 1. Pit dates and add to food processor with peanut butter. Process until combined. 2. Transfer this mixture to a bowl and mix in carob powder. 3. Stir in puffed quinoa. 4. Wet hands and roll into balls. Place on parchment lined plate and put them in the fridge for about 15 minutes. Move to airtight container and store in fridge. Looking for more quick and easy snack ideas?
