3 Carrots, shredded
1 Onion, Diced
3 Celery Stalks, diced
1 Bell Pepper, diced (green, red, orange or yellow is fine)
4 Garlic cloves, minced
1/2 tsp Black pepper, chili powder, cumin
6 cups Vegetable stock
- Layer ingredients in slow cooker
- Pour in vegetable stock and don't stir
- Cover and cook on high for 4-5 hours or on low for 8-10 hours
