
2 cups Potatoes, diced
1/2 Onion, diced
4 Garlic cloves, minced
2 Carrots, diced
1 tsp. Garam Masala
1 tsp. Ground Coriander
1 tsp. Ground Cumin
1 tsp. Ground Black Pepper
2 tsp. Chili powder
4 cups Vegetable Stock
1 cup. Green peas
1. Heat oil in a large saucepan. Add onion and garlic and fry for 1 minute.
2. Add potatoes and carrots and continue to stir fry on low for about 5 minutes.
3. Add spices and stir.
4. Stir in vegetable stock. Bring to a boil. Reduce heat, cover and simmer for 25 minutes.
5. Add the peas and continue to cook for 5 minutes.
